Sugar Alternatives in Candy Making: What Actually Works
Replacing sugar in candy is harder than replacing it in baking. In a cake, sugar contributes moisture, tenderness, and browning — functions that can be partially replicated by other ingredients. In candy, sugar is the structure. The entire chemistry of fudge, caramel, hard candy, and marshmallow depends on how sucrose behaves at specific temperatures and concentrations. Swap it carelessly and you don’t get a healthier version of the candy; you get a different substance entirely.
What Sugar Actually Does in Candy
Understanding the problem starts here. Sucrose (table sugar) does three main things in confectionery: it provides bulk and structure, it controls water activity (preventing microbial growth and keeping the candy shelf-stable), and it determines texture through crystallization behavior. Different candies exploit different properties. Hard candy uses highly concentrated sucrose in an amorphous (non-crystalline) state. Fudge is controlled crystallization. Caramel is sucrose undergoing thermal decomposition. Any substitute needs to do at least the relevant job, or the result fails.
Erythritol: The Closest Structural Match
Erythritol is a sugar alcohol that occurs naturally in small amounts in grapes and fermented foods. It provides roughly 70% of the sweetness of sucrose with almost no calories and minimal effect on blood glucose — it’s absorbed in the small intestine before reaching the colon, which also means it causes less digestive distress than other sugar alcohols like sorbitol or maltitol. For hard candy, erythritol behaves reasonably well at high temperatures and can reach a glass state, though it has a lower melting point than sucrose and recrystallizes more readily after cooling. The result is a candy that sometimes has a slightly gritty texture, particularly in humid conditions.
Allulose: The Most Promising Option for Caramel
Allulose is a rare sugar found naturally in small quantities in figs, raisins, and wheat. Structurally it’s almost identical to fructose but the body can’t metabolize it, so it contributes essentially no calories. Its most useful property for candy makers: it caramelizes and browns much like sucrose. You can make a genuine caramel-colored, caramel-flavored sauce with allulose. The Maillard reactions that create caramel’s complexity proceed normally. For caramel candy specifically, allulose is currently the best-performing substitute — the texture, color, and flavor are much closer to the original than any other alternative.
Isomalt: The Hard Candy Standard
Professional sugar artists and hard candy makers who need a no-sugar option typically use isomalt. It has a higher tolerance for humidity than sucrose (meaning pulled sugar decorations made with isomalt don’t weep and fog as quickly), melts at a similar temperature, and can be pulled, blown, and cast like regular sugar. It’s about half as sweet as sucrose, which can be an advantage when the goal is a less intensely sweet product. The downside: in significant quantities (over about 20 grams in one sitting), it causes digestive discomfort in most people, and it’s expensive compared to table sugar.
Dates and Fruit Pastes: Not a Substitute, a Different Product
Dates, dried figs, and pureed fruit are popular in “no added sugar” candy recipes, and they do produce genuinely tasty results. But it’s worth being clear: these are not sugar-free. Dates are roughly 70% sugar by weight — mostly fructose and glucose — and a date-based candy bar has comparable sugar content to a conventional one. What changes is the fiber content (which affects blood sugar response), the micronutrient profile, and the flavor. For people avoiding refined sugar specifically, this distinction matters. For people managing blood glucose, it matters a great deal.
Monk Fruit and Stevia: Sweetener Only
Monk fruit extract and stevia are intensely sweet with minimal caloric content, but they contribute no structure. You can use them to sweeten a recipe, but you can’t use them to build a candy’s body. In practice, they’re almost always blended with erythritol or allulose — the bulk agent provides structure, the intense sweetener brings the sweetness level up to what people expect.
A Realistic Assessment
If your goal is to make a hard candy, caramel, or lollipop that is genuinely low-sugar and still functions like a candy — allulose for caramel-type applications, isomalt for hard candy, erythritol for simpler applications where texture variance is acceptable. Accept that some texture differences will remain; the goal is good, not identical. If your goal is “no refined sugar but natural sugars are fine,” dates and dried fruit make excellent, genuinely delicious confections. Just know what you’re choosing and why.
